Our Story

Where It All Began

With over 30 years of experience in the industry, chef has extensive training and experience in both Northern Italian, Classical French & Cajun/Creole cuisines. Having grown up in South Louisiana, he brings his love of Creole and Cajun inspired cuisine to Northeast Ohio via Zydeco Bistro’s mobile restaurant that he began in 2010. Chef has formal training in ServSafe® food safety, catering, cooking demonstrations and both private & public mobile restaurant services. His unique mobile restaurant brings the culture of Louisiana to the Great Lakes, which includes authentic Cajun & Creole dishes among other culinary creations.
